This is the perfect sandwich for lunch on a cool, crisp Autumn afternoon, with the wonderful tastes an aromas of the season, featuring delicious crisp apples, tangy cranberry cheddar cheese, warm cinnamon, crunchy nuts, scrumptious pumpkin butter, creamy melted brie, and of course, crisp thick bacon , all nestled together on delicious raisin bread....welcome to Autumn!

Ingredients For a taste of autumn

  • 12 slice
    thick cut bacon
  • 4 Tbsp
    butter
  • 1 lb
    firm apples, thinly sliced
  • 1 Tbsp
    light brown sugar
  • 1 tsp
    cinnamom
  • 1/4 c
    chopped pecans
  • 1/4 c
    chopped walnuts
  • 8
    thick slices bakery/homemade raisin bread
  • 8 Tbsp
    pumpkin butter
  • 1
    block (7 ounces) cranberry cheddar cheese, sliced (approximately 1/4 inch thickness)

    round (8 ounces) brie cheese, cut into quarters, then sliced into approximately 2 inch slices

How To Make a taste of autumn

    Preheat oven to 375 degrees. Line a large baking sheet with aluminum foil, and arrange bacon slices on top. Cook for approximately 15 minutes, or until bacon is crisp.

    In a small skillet over low to medium heat, add 2 tablespoons butter, sliced apples, 1 tablespoon light brown sugar, 1 teaspoon cinnamon, 1/4 cup chopped pecans, and 1/4 cup chopped walnuts. Saute for approximately 10 minutes.

    On work surface or cutting board, place down 4 slices raisin bread, and spread each slice with 1 tablespoon pumpkin butter. Next, arrange slices of cranberry cheddar( approximately 5-6 on each slice) on top of pumpkin butter. Divide apple mixture evenly on top of cranberry cheddar among each sandwich. Place 3 slices each of bacon over apple mixture on each sandwich. Top with approximately 4 slices of brie. Spread the additional 1 tablespoon of pumpkin butter on inside of top slice of raisin bread, and place on top of each sandwich.

    Wrap each sandwich in aluminum foil and place in oven until cheeses are melted. Heat a grill pan on low to medium, and add 1-2 tablespoons butter, depending on size of pan (may have to grill 2 sandwiches at a time). Place oven heated sandwiches in grill pan, and grill several minutes on each side. Serve immediately,
