Posting this here so that I can still find it. It's a family favourite. You can add additional vegetables to the dish if desired. "If you have never had a roast wrapped in bacon, you are in for a treat. The end result is a tasty and moist piece of beef."

Ingredients For my favourite - bacon wrapped sirloin

2 1/2 lbroast, sirloin tip

2 Tbsptablespoons dijon mustard, coarse or smooth

1 tspblack pepper, freshly ground

1 tspthyme leaves, fresh

6 slicebacon, thick, your favorite

3 - 4 mdsweet onions, wedged
How To Make my favourite - bacon wrapped sirloin

1Preheat oven to 325 degrees.

2Cut a few slits on top of roast to allow the bacon to flavour the meat.

3Add the black pepper to the mustard and evenly spread all over the roast.

4Place the roast in a pan and wrap the bacon tightly around the meat; making sure to cover the top and sides.

5Bake at 325 degrees for 2 hours. Add the onions and any additional vegetables in the last 40 minutes.

6Remove roast from oven and let sit for 15 min before slicing.

7You can make gravy, if desired.
