This is a quick and easy { breakfast for dinner idea }. Normally I would have made 3 patties from the breakfast sausage, but I only had the two bangles left, so these were very hardy breakfast sandwiches. You can use any type of bagel and sausage that you like. Brew a fresh pot O coffee and you’re good to go!

Ingredients For this ain’t no egg mc muffin

  • 2 everything bagels { or bagel of your choice }
  • 3 large eggs
  • smidge of milk { 1 tablespoon }
  • ¼ cup of finely minced red onion
  • 1 roll breakfast sausage { your choice } we like the hot variety
  • 2 slices extra sharp cheese
  • 2 tablespoon unsalted butter
  • 1 teaspoon turbinado sugar
  • 1 teaspoon fine sea salt
  • 1 teaspoon fresh ground pepper

How To Make this ain’t no egg mc muffin

    Divide the sausage in ½ and make two patties. Fry them till they are completely done.

    While the sausage is cooking, sauté the red onions in the butter and sugar.

    Break the eggs into a bowl and add the 1 tablespoon of milk, salt and pepper to them and whisk. When the onions are soft add the eggs to them and scramble. Add a wee bit more butter if necessary.

    While the eggs are cooking, slice the bagels in ½ and toast.

    Spread some butter on the bottom ½ of the bagel.

    Top with the sausage patty and cheese.

    Put the eggs on top.

    And then put the top ½ on.
