4 lbpork shoulder, bone-in

2 1/2 cwhite large onions, chopped

1 1/2 cbbq sauce of your choice, divided

1/2 capple cider vinegar
-
1/4 cpacked brown sugar such as demerara
-
2 Tbspprepared mustard
-
2 Tbspbackstrap molasses
-
1 Tbspworcestershire sauce
-
2 Tbsppuréed chipotle in adobo sauce

2 tspliquid smoke
-
4 lgcloves garlic, pressed
-
freshly ground black pepper, to taste (i always use mixed peppercorns)

1/8 tspkosher salt, or to taste

1 1/2 Tbspcornstarch mixed with 1/2 cup cold water
How To Make texas bbq slow cooker pulled pork

1Place ½ chopped onions on the bottom of a slow cooker. Place roast on top, fat side up, and cover with remaining onions. In a medium bowl, combine remaining ingredients and whisk. Pour 2/3 of sauce over pork roast, cover and cook on High for 3 hours. Reduce heat to Low and cook for 2 ½ hours.

2After 5 1/2 hours, remove roast from slow cooker, and shred meat using two forks. Return to slow cooker and pour remaining sauce on top. Stir and cook for an additional 1 hour on High. Scoop meat draining as much liquid as possible and transfer to a plate; set aside.

3Carefully transfer liquid to a large deep saucepan over medium heat. When it starts boiling, add ½ cup BBQ sauce; stir. Cook for 10 minutes or until sauce thickens, stirring occasionally. Add cornstarch mixture and when sauce thickens, transfer meat to saucepan, stir and heat through for 5 minutes.
