This is another dish I got from a lady at The Independent Living group when they had a dinner. Its a recipe with a little bite but boy is it yummy.Enjoy!!!!!!!!!!

Ingredients For tangy pork with tomatillos,tomatoes,cilantro

1 1/2 tspground cumin
-
1 tspchili powder
-
1/2 tspsalt
-
1/4 tspground red pepper
-
1 lbpork tenderloin, cut into 1 inch cubes

1 Tbspolive oil, divided
-
1 cancooking spray
-
1 lgonion, chopped
-
1 tspgarlic, minced
-
2 ctomatillos, chopped
-
2 ctomatoes, chopped
-
1/2 ccilantro, fresh, chopped

4 cminute rice
How To Make tangy pork with tomatillos,tomatoes,cilantro

1Cook rice according to directions on box and drain.Combine the first 4 ingredients in a medium bowl. Add pork; toss well. Heat 1 1/2 tsp. oil in large non-stick skillet coated with cooking spray. Add pork; saute 3 minutes. Remove pork fram pan; keep warm. Heat 1 1/2 tsp. in pan over medium high heat. Add onion and garlic; saute 30 seconds. Add tomatillos; saute 4 minutes. Add pork; Cover and cook 5 minutes or until pork is done. Add tomatoes and cilantro; cover and cook for 1 minute. Serve with rice.
