At least once a week we have taco night to suit our youngest son. Well I decided to change it up a little since I had a box of jumbo shells. He loved them!

Ingredients For taco stuffed shells

  • 15
    uncooked jumbo pasta shells
  • 1/2 lb
    lean ground beef
  • 1/2 lb
    ground pork
  • 1/2
    medium onion, chopped
  • 1
    envelope low sodium taco seasoning mix
  • 1 c
    salsa
  • 1 c
    frozen corn
  • 1/2 c
    canned black beans, rinsed and drained
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    ground cumin
  • 1 c
    shredded taco or mexican cheese blend
  • TOPPINGS
  • sour cream
  • sliced black olives
  • sliced green onions
  • sliced jalapeno peppers

How To Make taco stuffed shells

  • 1
    Cook pasta shells according to package directions; drain.

    Cook the beef and pork over medium heat about half way and then add your onions. Cook until meat is no longer pink and the onions are tender. Drain any excess fat.

    Add the taco seasoning, salsa, corn, beans and the basil and cumin. Mix well.

    Stuff each shell with a spoon full of the meat mixture. Place in a 13 x 9 baking dish coated with cooking spray.

    Sprinkle with cheese. Cover and bake at 350° for 25 to 30 minutes.

    Top with sour cream, additional salsa, olives and green onions.
