At least once a week we have taco night to suit our youngest son. Well I decided to change it up a little since I had a box of jumbo shells. He loved them!

Ingredients For taco stuffed shells

15uncooked jumbo pasta shells

1/2 lblean ground beef

1/2 lbground pork
-
1/2medium onion, chopped
-
1envelope low sodium taco seasoning mix
-
1 csalsa
-
1 cfrozen corn
-
1/2 ccanned black beans, rinsed and drained

1/4 tspdried basil
-
1/4 tspground cumin
-
1 cshredded taco or mexican cheese blend
- TOPPINGS
-
sour cream
-
sliced black olives
-
sliced green onions
-
sliced jalapeno peppers
How To Make taco stuffed shells

1Cook pasta shells according to package directions; drain.

2Cook the beef and pork over medium heat about half way and then add your onions. Cook until meat is no longer pink and the onions are tender. Drain any excess fat.

3Add the taco seasoning, salsa, corn, beans and the basil and cumin. Mix well.

4Stuff each shell with a spoon full of the meat mixture. Place in a 13 x 9 baking dish coated with cooking spray.

5Sprinkle with cheese. Cover and bake at 350° for 25 to 30 minutes.

6Top with sour cream, additional salsa, olives and green onions.
