this is in oven as i type... hubby an i came up with this recipe today this takes some time to get started but is sooooo worth it

Ingredients For taco lasagna

  • 4-6
    flour tortillas...8 in
  • 1 jar
    med taco sauce
  • 1 lb
    pork sausage, mild
  • 1 can
    small black olives,sliced
  • 1 md
    onion,chopped fine
  • 1 md
    green bell pepper,chopped fine
  • 1 pkg
    taco seasoning mix
  • 1/3 c
    water
  • 1 can
    mild refried beans
  • 1 can
    whole kernel corn
  • 2 c
    mexican blend shredded cheese
  • 1 c
    sharp cheese
  • 1 c
    light sour cream

How To Make taco lasagna

    preheat oven to 350
  • 2
    in lg fry pan start browning sausage over med heat.. while sausage cooks open tortillas..spray nonstick cooking spray in 9 in round cake pan..open jar of taco sauce pour 1/2 into cake pan.. take 1 tortilla at a time and dip into taco sauce flip over.. then set onto dinner plate.repeat with all tortillas...add more sauce if needed....once all done set aside

    once sausage is cooked add onion,bell pepper and olives cook and stir til onion limp now add taco seasoning mix and water cook and stir bout 5 min more now mix refried beans and corn in med bowl open both cheese

    assembly...put 1 tortilla in bottom of 9 in cake pan[yes still have any leftover taco sauce in it]them put bean/corn mix then layer of meat them mexican cheese... keep doin layer endin with tortilla

    than pour any of the taco sauce left in jar.put in oven cook 15 min remove from oven add sharp chhese to top and put back in oven.....for bout 5 min till cheese is melted good...

    remove from oven let sit bout 10 min.. then cut into wedges and top each wedge with lg dollop of sour cream
