My Dad gave me this recipe and it is a wonderful change from the "usual" shepherd's pie

Ingredients For sweet-potato and sausage shepherd's pie

2 mdsweet potatoes, peeled and chunked

1 Tbspolive oil

4cloves garlic, minced

1 mdonion, diced

1/2 lbyour favorite sausage, no casings. i like store made.

1/2 lblean ground beef
-
1/4 tspblack pepper
-
6 ozdark beer
-
1 1/2 Tbspcornstarch
-
2 Tbspcold water
-
15 ozcanned corn, i prefer frozen. green beans work as well.

8 1/4 ozcreamed corn, omit if using beans.

1/2 cmilk, 2%

2 Tbspbutter, i use lightly salted

1 Tbspbrown sugar, firmly packed

salt to taste
How To Make sweet-potato and sausage shepherd's pie

1Preheat oven to 400 spray a regular loaf pan with cooking spray

2Boil potatoes until tender in a large pan.About 15 min.

3Combine olive oil, garlic and onions in a large skillet and saute for 5 min or until tender. Add sausage,beef and pepper. Saute until meat is cooked through..about 8 min. Add the beer and simmer until reduced by half..about 4 min. I usually remove the veggies after cooking and saute beef/sausage separately..then drain fat. You can do all together..might have more flavor!

4In a small glass mix the cornstarch with water. Add this to meat and stir until thickened. Remove from heat

5Spread the meat mixture in bottom of loaf pan, in small bowl mix the corn/creamed corn together and layer if over the meat.

6When potatoes are cooked, drain and return to pan. Add milk, butter and brown sugar, salt to taste, then mash till smooth. Spread over corn mixture

7Bake 35 min or until potatoes are lightly browned at the edges
