sweet and sour pork

Years ago, I took several Chinese cooking classes. This was one of the recipes I got from the class and it was a family favorite. You can choose a light batter or a heavier batter. I prefer the light batter on shrimp, but the heavier batter on the pork. You can also add/subtract any veggies that you would like. Tip: Test the oil by dipping a chopstick into it. If it bubbles around the chopstick, the temperature is right for cooking.

Ingredients For sweet and sour pork

1/2 lbpork tenderloin, or 2 lean pork chops, cut into small cubes

2 Tbspsherry

1 tspsalt
- COATING #1: (LIGHT COATING)

1egg, beaten

flour
- COATING #2: (HEAVIER COATING)

1egg, beaten

1/2 cflour
-
1/2 cwater
-
1/4 tspsalt
- SAUCE:
-
1 clovegarlic, minced
-
1 Tbspoil
-
1 cvegetables (see the options below)

1/2 csugar or honey
-
1/2 cwhite vinegar
-
3/4 cchicken stock
-
2 Tbspsoy sauce
-
1 1/2 Tbspcornstarch
-
1/4 cwater
-
oil, for deep frying
- VEGETABLES: (EACH ARE OPTIONAL, PICK ANY OF INTEREST)

carrots, diced
-
onions, wedges
-
bamboo shoots
-
green bell pepper, diced
-
pineapple chunks
-
celery, diced
-
mushrooms, whole, or halved if larger
How To Make sweet and sour pork

1Marinate pork in sherry and salt for 15 to 30 minutes. Remove pork from the marinade.

2If using coating #1: dip the pork in the egg, then the flour.

3If using coating #2: dip the pork into the batter.

4Deep-fry until golden brown; drain.

5Heat 1 tablespoon oil in wok.

6Brown garlic.

7Add vegetables and stir-fry 2-3 minutes (depending upon which vegetables you chose).

8Add honey (or sugar), vinegar, stock and soy sauce.

9Bring to a boil.

10Combine cornstarch with water; add to sauce, stirring until thickened.

11Add pork and cook just enough to heat through.

12Serves 2 as a main course, or up to 6 as a side dish.
