It is Summer, and it is time for evenings out by the pond with friends and family, while serving great food. I made a ton of these for a catering event this afternoon, but I saved a few for myself. They are easy to make, and the slow cooker does all the heavy lifting. So, you ready... Let's get into the kitchen.

Ingredients For summer essentials: brats, peppers, onions in beer

  • PLAN/PURCHASE
  • BUTTER-BRASIED ONIONS AND PEPPERS
  • 4 Tbsp
    sweet butter, unsalted
  • 1 lg
    yellow onion, i prefer vidalia
  • 1 lg
    green pepper
  • 1 tsp
    caraway seeds
  • 1 tsp
    mustard seeds
  • 1/2 tsp
    white pepper, freshly ground
  • 1 pinch
    crushed red-pepper flakes
  • salt kosher variety, to taste
  • THE BRATS
  • 5 - 6
    good brats
  • 12 oz
    beer, 1 bottle
  • 2 Tbsp
    white wine vinegar
  • 1 Tbsp
    worcestershire sauce

How To Make summer essentials: brats, peppers, onions in beer

    PREP/PREPARE

    Gather your Ingredients (mise en place).

    BUTTER-BRAISE ONIONS AND PEPPERS
  • 4
    Chop the onions and the green pepper.
  • 5
    Add the butter to a skillet, over medium heat.
  • 6
    When the foaming subsides, add the onions.
  • 7
    Cook for 3 – 5 minutes until the onions begin to soften, and then add the chopped green pepper.

    Cook for an additional 3 – 5 minutes, and then add the remainder of the dry spices (caraway seeds, mustard seeds, white pepper, crushed red-pepper flakes, and salt).

    Stir for additional 3 – 5 minutes.

    Remove the onions and peppers, and place in the bowl of a slow cooker.

    THE BRATS

    Add the brats to the skillet you cooked the veggies in.

    Brown on all sides, about 1 – 2 minutes per side.

    Add to the top of the onions and peppers.
  • 15
    Add the beer, and the remaining ingredients to the slow cooker.

    Cook on low for 3 – 4 hours.

    Serve in a simple manner in a bowl, and provide hotdog buns and spicy mustard, or just eat them plain with the onions, and peppers. Enjoy
