Ingredients For spicy sausage pasta

19 ozhot italian sausage, cut into pieces

1 lgonion, diced (appx 3 cups)

3-4garlic cloves, minced

2 can(10 oz each) rotel tomatoes with green chiles, mild

1 cheavy cream
-
4 cchicken broth, low sodium
-
salt and pepper

1 lbpasta of choice

2 cshredded cheese, divided (i used monterey jack)
How To Make spicy sausage pasta

1In a large OVEN SAFE skillet over medium high heat, saute the italian sausage and onions.

2Once cooked, add in the garlic and cook until fragrant, about 30 seconds.

3Add in the broth*, rotel tomatoes (undrained), cream, salt and pepper, and uncooked pasta. Stir well. *I used organic, free range chicken broth (low sodium), and it seemed to be so much more flavorful than just normal chicken broth! Bring to a boil, then reduce heat to medium-low, and cover. Simmer, stirring occasionally, until pasta is tender, 13-15 minutes.

4Remove from heat and stir in 1 cup of shredded cheese. Sprinkle remaining cup of cheese on top and broil in the oven until cheese is melted, bubbly, and starting to get spotty brown.
