broccoli and apple bacon salad

This salad was an accident in the works. All of these ingredients worked really well together so I keep making it. The sweetness from the apples, the smoky maple bacon and tartness from the cranberries are a great combo!

Ingredients For broccoli and apple bacon salad

  • 2 c
    broccoli florets
  • 3/4 c
    red apple cut into large matchstick size
  • 1/2 sm
    red onion, diced in small pieces
  • 3 slice
    maple or applewood bacon (could use turkey bacon)
  • DRESSING
  • 2 Tbsp
    mayonnaise (hellmans) light
  • 1/4 c
    daisy sour cream, fat-free
  • 2 clove
    garlic, minced
  • 11/2 tsp
    cider vinegar
  • 1/2 tsp
    brown sugar, light
  • 3 Tbsp
    dried cranberries unsweetened
  • 1/4 tsp
    black pepper
  • 3 Tbsp
    sliced almonds, no salt

How To Make broccoli and apple bacon salad

    Whisk garlic, mayo, sour cream, vinegar and sugar in a bowl. Add broccoli, apple, onions, bacon, cranberries and pepper. Stir to coat with dressing. Refrigerate until serving. Add almonds and toss. Note: If you find that the dressing is too thick for you, add some milk or a squeeze of fresh lemon juice which would also help with the apples turning brownish.
