spice essentials: spicy pork rub
This is a great pork rub with a bit of a spicy kick. I designed it for pork; however, I can see it being used on chicken, and I might add some dill, and try it out on fish. I have included a recipe that I use it with on boneless pork tenderloins. So, you ready… Let’s get into the kitchen.

4 Tbsphungarian paprika

2 Tbspcoconut sugar

1 Tbspwhite pepper, freshly ground

1 Tbspsalt, kosher variety

2 tspdried thyme
-
2 tspmustard powder

1 tspground cumin

1 tspdried sage

1/4 tspcayenne pepper, or to taste
How To Make spice essentials: spicy pork rub

1PREP/PREPARE

2The amount of time it takes to bake these chops will be determined by their thickness. My chops were 1-inch (2.5cm). If they are thicker or thinner, will need to adjust the baking time accordingly.

3Gather your Ingredients (mise en place).

4Add all the spice ingredients to a bowl, and whisk together.

5Place into a glass jar with a tight-fitting lid, and store in a cool, dry place until needed.

6BAKED PORK CHOPS

7Brush the pork chops with a generous amount of honey.

8Sprinkle the spice mix on both sides of the chops, and place in the fridge for about an hour.

9Meanwhile, place a rack in the middle position, and preheat the oven to 400f (205c).

10Add a wire rack to a parchment-lined baking sheet, and place the chops on top, and sprinkle a bit more spice mixture on top.

11Chef’s Tip: Rub a bit of oil on the rack, so the chops do not stick.

12Place into the oven, and bake, until they are cooked through, and golden in color, about 20 minutes.

14I usually serve this on a bed of white rice; however, when I am feeling nostalgic, I serve it with mash taters, and corn. Enjoy.
