My husband loves this pork tenderloin with a mexican flair. This recipe came from Paula Deen's magazine.

Ingredients For spice-encrusted pork tenderloin

1 Tbspchili powder

1 Tbspground coriander

1 Tbspground cumin

1 Tbspsalt

1 Tbsporegano, dried

1 Tbspgarlic salt

1 Tbspcracked black pepper ( i use regular)

1/4 colive oil
How To Make spice-encrusted pork tenderloin

1Preheat oven to 400. Line a rimmed baking sheet with aluminum foil; set aside.

2In a small bowl, combine chili powder, coriander, cumin, salt, oregano, garlic salt, and pepper. Coat tenderloins evenly with spice mixture.

3In a large nonstick skillet,, heat 1 tablespoon olive oil over medium-high heat. cook 1 tenderloin for 2 to 3 minutes on each side, or until browned. Revmove tenderloin, and place on prepared pan. Repeat with remining olive oil and tenderloin. Bake for 20 minutes, or until a meat thermometer inserted into the thickest part of tenderloin registers 155, or desired degree of doneness. Slice to serve.
