This dish is packed with flavor!! It can be made low calorie by using Margarine and artificial sweetener or hotter by adding more Ancho Chili. I cooked this in a wok! Whatever your heart desires!

Ingredients For spanish pork

2 lbboneless pork loin fat removed and cubed

1 Tbspbutter

1 lgonion diced
-
1ancho chili in adobo sauce seeded and chopped

1 cbell pepper diced ( any color )

1 ccelery diced
-
16 ozcan diced fire roasted tomatoes

1 Tbspminced garlic
-
1/2 tspchili powder
-
3/4 cwater
-
salt and pepper to taste

2 Tbspsugar
-
cornstarch ( optional )
How To Make spanish pork

1Melt butter in a large fry pan and brown the pork

2Push pork to one side, add onion and garlic Saute' until tender
-
3Mix onion and pork together

4Add the can of tomatoes, water, celery, bell pepper, ancho chili, salt and pepper

5Stir, cover and simmer 45 minutes or until pork is tender

6Before serving stir in 2 Tbls sugar or more to taste

7Thicken with Cornstarch to your liking

8Serve over rice
