I saw this recipe one evening on the cooking channel with Michael Symon. This is his mother and grandmother's recipe, it looked so delicious, so of course I just had to try and so happy I did, it's fantastic. Ingredients For spaghetti with meatballs

1/3 colive oil

1 clovegarlic, minced

1shallot, minced

1 1/2 cdiced day old wheat bread

1/4 cmilk
-
1 1/2 lbground beef
-
3/4 cricotta
-
1/2 cfresh basil leaves, chopped

1/2 cfresh parsley, chopped

1/4 cgrated parmesan

1 tspsalt
-
1 lgegg
- YIA YIA'S NEAPOLITAN SAUCE
-
1/4 colive oil
-
2 lbbaby back ribs, separated
-
1 lgonion, diced
-
1 Tbspsalt
-
6 clovegarlic, sliced

1 bottledry white wine
-
228 ounce cans tomatoes, chopped
-
3 Tbspfresh oregano leaves
-
1 Tbspcrushed red pepper
-
1bay leaf
-
12 to 3 inch parmesan rind
- SPAGHETTI

kosher salt

1 lbspaghetti

15fresh basil leaves, torn

1 to 2 Tbspbutter

1/4 cgrated parmesan
How To Make spaghetti with meatballs

1SAUCE: In large Dutch oven, heat the oil over medium heat. Add the ribs and brown about 4 minutes each side. Add the onions and sprinkle with salt. Cook about 2 minutes. Add garlic and cook another 3 minutes.

2Add white wine, tomatoes, oregano, red pepper flakes, bay leaf, and Parmesan rind. Bring to simmer, reduce to low and cook up to 8 hours reducing sauce by 1/3.

3MEATBALLS: In small fry pan, add 1 tbsp. olive oil over medium heat. Add garlic and shallots and cook for 2 to 3 minutes. Soak the bread crumbs in medium bowl.

4Combine the beef, ricotta, basil, parsley, Parmesan, salt, egg, shallots and garlic in large mixing bowl. Add the bread crumbs. Mix thoroughly until combined. Form the meat mixture into 2 inch meatballs. In large frying pan, heat remaining oil and brown meatballs on all sides.

5Place meatballs in Yia Yia's sauce and simmer for 30 minutes.

6SPAGHETTI: In large pot, lightly salt water and cook pasta according to package directions. Drain. Add a cup or two to a large frying pan and add pasta, basil leaves, Parmesan, and butter. Toss to coat. Transfer to serving platter and serve with sauce, meatballs and ribs.
