When I found out that I was going to Las Vegas for the World's Food Championship to cook my chili I was super excited. I did find out that there would have to be some changes and so I set out to Perfect something that was damn near perfect to begin with...And, so it was born, Son of (H)Eat it Up Chili!

Ingredients For son of (h)eat it up chili

1 lbground beef, 94% lean

1 lbground sausage
-
2 Tbspvegetable oil
-
1 lgwhite onion, minced
-
1green bell pepper, seeded and chopped
-
3jalapeno peppers, seeded, minced
-
1habanero pepper, fresh, seeded, minced
-
6 clovegarlic, minced
-
1 bunchchives, finely minced
-
2 cankidney beans, drained and rinsed (14.5oz)

1 candiced tomatoes (14.5)
-
1 cantomato sauce (8oz)
-
1 cantomato paste
-
14 1/2 ozbeef broth
-
3/4 cchili powder
-
1 Tbspcumin (ground)
-
1 tspgarlic powder
-
1/2 tspcayenne pepper
-
1 Tbspsalt
-
1 Tbspwhite pepper
-
1 Tbspfresh ground cinnamon
-
1 tspanise seed
How To Make son of (h)eat it up chili
-
1Cook beef and pork until brown and crumbly and no longer pink. Drain and discard any grease.

2In a large pot heat olive oil over medium heat. Stir in onion, bell pepper, habanero, jalapeno, and garlic. Cook for about 5 minutes, until the onion is soft.

3Stir meat back in and add chives, beans, tomatoes, tomato paste, tomato sauce, and broth. Add additional broth until desired consistency is reached.

4Sprinkle with spices and seasonings.

5Bring to a boil over medium heat then reduce to low and simmer for 2 hours. Stirring occasionally. Remove from heat and allow to rest for 20 minutes.
