smothered pork chops
I made this recipe because I often can or freeze extra pork broth which surprisingly I often have in the house. So I'm always looking for ways to use it. This is a delicious pork chop and goes great with cooked white rice, egg noodles or mashed potatoes!

Ingredients For smothered pork chops

2 Tbspcanola oil

6-81/4-1/2" boneless pork loin chops trimmed of fat if desired

1/2 + 1/4 cflour, separated

2 Tbspbutter
-
1 mdonion, sliced into rings

1 pkg(8 oz.) fresh mushrooms, cleaned and sliced

2 cpork broth (i save and freeze or can our pork broth) if you don't have pork broth, use 2 cups chicken broth.

salt & pepper to taste

fresh shopped parsley
How To Make smothered pork chops

1Heat canola oil in pan over medium high heat.

2sift 2/3 cup flour with salt & pepper to taste. Dredge pork chops in flour and brown in hot oil.

3When chops are nicely browned, remove them to a rack to drain; set aside, keep warm.

4Add butter to pan and saute mushrooms and onions until softened.

5Sprinkle 1/3 cup leftover flour over mushrooms and onions and stir until smooth and incorporated.

6Add pork broth or chicken broth and stir until smooth and beginning to thicken.

7Return pork chops to pan and simmer covered for 25 minutes.

8Add more salt & pepper to taste if needed.

9Garnish with fresh, chopped parsley!

10Serve with white rice, noodles or mashed potatoes.
