This is a newly created recipe, the meat was so tender. The combination of the pepper, onion gravy and broiled grape tomatoes served over mashed potatoes, such a flavorful combination.

1 canlow sodium beef broth

1 lggreen pepper, thinly sliced

1 lgonion thinly sliced

1 ptgrape tomatoes

mashed potatoes

creole seasoning, salt and pepper

4 Tbspcorn starch to thicken broth

2 clovegarlic, minced
How To Make smothered center cut pork chops

1Salt and pepper the pork chops. Brown them in a skillet.

2Add the peppers, garlic and onions over the chops. Add the beef broth. Simmer for 30 minutes.

3Toss the grape tomatoes in olive oil lightly. Salt and pepper. Bake at 350 degrees for 30 minutes.

4Add a small amount of water to the corn starch to make a paste and pour into the pork chop pan to thicken the broth and make gravy. Continue simmering while the tomatoes are cooking.

5To serve, Place a small mound of potatoes int he center of a plate, Slice a pork chop thin and surround the potatoes with the chop. Next smother with the gravy and place the cooked tomatoes around it. Lightly sprinkle the cajun seasoning over the dish before serving.
