This is a newly created recipe, the meat was so tender. The combination of the pepper, onion gravy and broiled grape tomatoes served over mashed potatoes, such a flavorful combination.

Ingredients For smothered center cut pork chops

  • 6 - 8
    center cut pork chops
  • 1 can
    low sodium beef broth
  • 1 lg
    green pepper, thinly sliced
  • 1 lg
    onion thinly sliced
  • 1 pt
    grape tomatoes
  • mashed potatoes
  • creole seasoning, salt and pepper
  • 4 Tbsp
    corn starch to thicken broth
  • 2 clove
    garlic, minced

How To Make smothered center cut pork chops

    Salt and pepper the pork chops. Brown them in a skillet.
  • 2
    Add the peppers, garlic and onions over the chops. Add the beef broth. Simmer for 30 minutes.

    Toss the grape tomatoes in olive oil lightly. Salt and pepper. Bake at 350 degrees for 30 minutes.

    Add a small amount of water to the corn starch to make a paste and pour into the pork chop pan to thicken the broth and make gravy. Continue simmering while the tomatoes are cooking.

    To serve, Place a small mound of potatoes int he center of a plate, Slice a pork chop thin and surround the potatoes with the chop. Next smother with the gravy and place the cooked tomatoes around it. Lightly sprinkle the cajun seasoning over the dish before serving.
