slow cooker cuban pork
I received this recipe from a good friend in the great big state of Texas, after I had posted it on my site, another friend made and was most impressed, a few weeks later I prepared, and I must say, this is delicious. Now what is Cuban Pork, I have no idea, I've never been to Cuba, but as far as pork with a good flavor, this is excellent.

Ingredients For slow cooker cuban pork

2 Tbspolive oil

1/2 corange juice

1/2 clime juice

1 1/2 tspsalt

1 tspground cumin
-
1 tspdried oregano
-
1/4 tspred pepper flakes

1/8 tspblack pepper

7 clovegarlic, smashed and minced

1onion, sliced thin

1bay leaf
-
1 1/2 kgpork shoulder, (3 lbs)
How To Make slow cooker cuban pork

1In a medium bowl, whisk together the oil, juices, salt, cumin, oregano, red pepper flakes, pepper, and garlic.

2Make slits in the pork with a knife and place the pork in the juice mixture and rub liberally all over with the oil mixture.

3Place pork in the slow cooker, along with the onion and bay leaf. Pour the remaining juices from the bowl over the pork.

4Cover and cook on low for 8 hours. Transfer pork to a cutting board and let cool slightly. Using two forks, shred into thick chunks. OR just shred it in the pot then use a large slotted spoon to scoop it out (this is the method I did in this photo, works great).

5Serve with cilantro lime rice and black beans, mashed potatoes, or in a sandwich with some of the juice spooned over the top, or in a tortilla with Cheddar cheese, etc.
