This is a recipe from my great great nona who lived in Sicily. I always make a very large batch and then freeze it in individual serving containers. I pack it for my daughters for lunch or use it for those awfully busy nights. I hope you enjoy!

Ingredients For sicilian vegetable soup

  • 1 pkg
    sweet italian sausage (or any you like) sliced
  • 1 lg
    onion (i like to use vidalias) sliced
  • 2
    celery chopped
  • 2 clove
    garlic minced
  • 2
    zucchini chopped
  • 2 md
    potatoes chopped
  • 2 md
    carrot chopped
  • 1 pkg
    sliced mushrooms
  • 1 can
    diced tomatoes undrained
  • 2
    handfuls of green beans ends taken off and cut into thirds
  • 5 c
    water
  • 1 c
    red wine
  • 2 tsp
    salt
  • 3 sprig
    basil or 1 tsp dried
  • 3 sprig
    fresh thyme or 1 tsp dried
  • black pepper
  • 2
    bay leaves

How To Make sicilian vegetable soup

    Prepare all the Veggies
  • 2
    Put everything in a stock pot and bring to a boil for 5 mins
  • 3
    Simmer for about 4 hours.
