A friend of mine had asked me, if I had any real easy, quick, main dish recipes, I could pass along, to a friend of her's, who was short on time. I couldn't think of one, off the top of my head that I thought would be better than "just everyday". She was cooking for her husband, as well, and they were professional people. Looking through the tons of recipes I had gathered over time, I finally found the perfect one. It has been perfect for us, as well.

Ingredients For sharon's baked pork chops

  • 1 Tbsp
    olive oil
  • 4
    pork chops, loin cut, boneless 3/4 in. thick
  • 1 Tbsp
    red wine vinegar
  • 1 Tbsp
    dijon mustard
  • 1 tsp
    dried tarragon
  • 1/4-1/2 tsp
    salt
  • 1 pinch
    fresh ground pepper

How To Make sharon's baked pork chops

    Preheat oven to 450 degrees.

    Put the 1 Tb. olive oil in a 9 x 13 in. baking dish and spread over bottom of dish.

    Put pork chops in baking dish,so that they are not touching.
  • 4
    Combine remaining ingredients in a small bowl with a extra small whisk or a fork. Place a teaspoon of sauce on each pork chop.

    Cover dish with foil, and bake 10 minutes. Take chops out of oven, and remove cover. Turn chops over, and bake, uncovered, 10 minutes more, or until cooked through but juicy.
