My mother used to make this simple, quick and cheap meal! She sadly is now in a care home, but the 'recipe' goes on This recipe is equally suited to tinned baked beans to replace tinned tomatoes

Ingredients For sausage hotpot (like my mother used to do)

2 pkgpork sausages (cooked and cut into chunks)

2 canchopped tomatoes in juice

1onion (chopped & cooked)

500 gpotatos (par boiled and sliced into thin slices)
How To Make sausage hotpot (like my mother used to do)

1Place a layer of cooked sausages in bottom of an oven proof dish (lasagne dish or casserole dish are fine) (Using about half the sausages)

2Next sprinkle over the cooked onion (Using about half the onion)

3Now spoon over 1 tin of tomatoes

4Next layer the par boiled potatoes to cover the whole mixture

5Now repeat steps ending with the potato mixture

6Now place in pre - heated oven (180 c) and cook for about 1 to 1 and 1/4 hours or until golden brown

7Serve with warm fresh bread and butter
