Ingredients For saucy slow cooker pork chops

  • 3 Tbsp
    olive oil
  • 5
    boneless pork chops, trimmed
  • 1
    onion, sliced
  • 2
    green bell pepper, sliced
  • 8 oz
    tomato sauce
  • 1/4 c
    brown sugar
  • 1 Tbsp
    apple cider vinegar
  • 2 tsp
    worcestershire sauce
  • 1 1/2 tsp
    salt
  • 2 Tbsp
    cornstarch, for thickening if needed
  • rice or pasta for serving
  • parmesan cheese for garnish

How To Make saucy slow cooker pork chops

    Heat olive oil in a large skillet over medium heat. Cook pork chops until browned, about 5 minutes per side. Transfer to a slow cooker.

    In the same pan, saute/sweat onions & peppers. Be sure to deglaze the pan to get all the browned bits (fond), using a splash of apple cider vinegar or white wine if needed. Add onions & peppers to the slow cooker on top of pork chops.

    In a bowl, whisk together the tomato sauce, brown sugar, vinegar, Worcestershire sauce & salt. Pour into slow cooker, gently stirring to coat meat & veggies.

    Cook on Low until tender, about 6-8 hours. (In a pinch you can cook it on Hi for 1 hour, then switch to Low for 3-4 hours.)

    Transfer pork & veggies to a serving platter, tent with aluminum foil to keep warm. Whisk cornstarch dissolved in a little water into sauce in the slow cooker until thickened. Spoon over chops & veggies. Enjoy over rice or pasta. Top with grated Parmesan cheese.
