3 Tbspolive oil

5boneless pork chops, trimmed

1onion, sliced

2green bell pepper, sliced

8 oztomato sauce

1/4 cbrown sugar
-
1 Tbspapple cider vinegar
-
2 tspworcestershire sauce
-
1 1/2 tspsalt
-
2 Tbspcornstarch, for thickening if needed

rice or pasta for serving

parmesan cheese for garnish
How To Make saucy slow cooker pork chops

1Heat olive oil in a large skillet over medium heat. Cook pork chops until browned, about 5 minutes per side. Transfer to a slow cooker.

2In the same pan, saute/sweat onions & peppers. Be sure to deglaze the pan to get all the browned bits (fond), using a splash of apple cider vinegar or white wine if needed. Add onions & peppers to the slow cooker on top of pork chops.

3In a bowl, whisk together the tomato sauce, brown sugar, vinegar, Worcestershire sauce & salt. Pour into slow cooker, gently stirring to coat meat & veggies.

4Cook on Low until tender, about 6-8 hours. (In a pinch you can cook it on Hi for 1 hour, then switch to Low for 3-4 hours.)

5Transfer pork & veggies to a serving platter, tent with aluminum foil to keep warm. Whisk cornstarch dissolved in a little water into sauce in the slow cooker until thickened. Spoon over chops & veggies. Enjoy over rice or pasta. Top with grated Parmesan cheese.
