sandy's soup beans
These are what my hubby grew up with. Of course I prefer more ham, so tend to add it and onions... I never thought about the cinnamon. Sandy, quite delicately said it was to make you less gassy. Yes, I rolled with laughter!

How To Make sandy's soup beans
-
1Soak beans overnight and then clean them of loose shells and rinse clear before putting into a pot with the ham bone. Cover with fresh water and sprinkle with cinnamon. Stir so cinnamon is combined not just on top of the water. Boil per package directions then turn down to a simmer for about 2 hours. Add potatoes after 60-90 minutes.

2I made this on low for 4 hours. Put in 3 chopped onions, beans and ham bone in with water to cover. Cinnamon 2 hours later. Ham bone removed at hour 4 and added extra chopped ham along with the ham from the bone. The hubby didn't want me to add the potatoes.
