Ingredients For roasted herb spiced pork

  • 5 lb
    pork shoulder roast
  • RUB
  • 2 tsp
    salt
  • 1/4 c
    chopped onion
  • 7 clove
    whole garlic
  • 2 Tbsp
    fresh oregano leaves
  • 1 Tbsp
    fresh parsley
  • 1 tsp
    cumin
  • 1 Tbsp
    smoked paprika
  • 1 pkg
    sazon goya
  • 1 tsp
    black pepper
  • TO ROAST
  • 1 md
    onion sliced
  • 1
    orange sliced
  • 1/2 c
    each orange juice and chicken stock

How To Make roasted herb spiced pork

    In a food procressor add the onion, garlic, oregano and parsley. Process adding olive oil to make a paste. Scap into a bowl and add the remaining rub ingredients. Mix well.

    Take the pork out of package and score it all over with a knife. Rub the rub all over the roast. Wrap in plastic wrap and place in fridge for 4 hours up to 3 days.

    To roast Preheat oven 275 degrees. Add a layer of onions and orange at the bottom of roasting pan. Pour in the stock and orange juice. Place the pork with the marinade into the pan.

    Remove the rub from the top of the roast. Roast the pork for about 3 hours or more until very tender. Let the roast rest for 15 minutes .

    drain the drippings through a fine mesh strainer. Place in a saucepan and cook until reduced and thickened a bit.

    Serve the roast with the sauce.
