Ingredients For quick & easy pork and veggie stir-fry

  • 1 lb
    pork tenderloin or boneless pork chops, thinly sliced into strips
  • 1/4 c
    corn starch
  • 1/4 c
    water
  • 3 Tbsp
    oil (vegetable or combination of sesame oil and vegetable oil
  • 2 md
    zucchini, sliced (approx. 3 cups)
  • 8 oz
    sliced baby bella mushrooms
  • 1/3 c
    Hoisin sauce
  • 1 Tbsp
    toasted sesame seeds
  • red pepper flakes to taste
  • cooked rice, brown or white

How To Make quick & easy pork and veggie stir-fry

    Cut the pork into thin strips.
  • 2
    Mix corn starch and water and thoroughly combine to remove lumps. Add the pork and toss.

    Heat 2 Tbsp oil in a wok or large skillet and stir-fry until pork is thoroughly cooked. Remove the pork from the skillet and add the remaining oil.

    Add zucchini and mushrooms to skillet and cook approximately 3 minutes until zucchini is tender. Add pork back to the skillet and add the Hoisin sauce, red pepper flakes, and sesame seeds. Continue cooking until heated through.

    Serve stir-fry over rice of your choice.
