Ingredients For quick & easy pork and veggie stir-fry

1 lbpork tenderloin or boneless pork chops, thinly sliced into strips

1/4 ccorn starch

1/4 cwater
-
3 Tbspoil (vegetable or combination of sesame oil and vegetable oil

2 mdzucchini, sliced (approx. 3 cups)

8 ozsliced baby bella mushrooms
-
1/3 cHoisin sauce
-
1 Tbsptoasted sesame seeds
-
red pepper flakes to taste

cooked rice, brown or white
How To Make quick & easy pork and veggie stir-fry

1Cut the pork into thin strips.

2Mix corn starch and water and thoroughly combine to remove lumps. Add the pork and toss.

3Heat 2 Tbsp oil in a wok or large skillet and stir-fry until pork is thoroughly cooked. Remove the pork from the skillet and add the remaining oil.

4Add zucchini and mushrooms to skillet and cook approximately 3 minutes until zucchini is tender. Add pork back to the skillet and add the Hoisin sauce, red pepper flakes, and sesame seeds. Continue cooking until heated through.

5Serve stir-fry over rice of your choice.
