These are a quick & easy dish for the working Mom. I serve with buttered noodles & usually a vegetable like peas on the side. Very versitile as you can use ground pork,beef,chicken or turkey.

Ingredients For quick & easy porcupine balls

  • 1 1/2 LB.
    ground pork beef.chicken or turkey
  • 1/4 c
    sweet pepper relish
  • 1/2 c
    white or brown rice (not instant)
  • 1
    egg
  • 3 Tbsp
    water
  • 1 tsp
    onion powder
  • 1/2 tsp
    garlic powder
  • 1 tsp
    parsley
  • 1/2 tsp
    salt & pepper(both)
  • 1 can
    either cr of chick,mushrm or celery soup
  • 2 c
    chicken broth or non salted chick boullion
  • 1
    1 lb bag egg noodles

How To Make quick & easy porcupine balls

    In deep skillet,dutch oven or pan wok, Add soups & broth & bring to slow boil. Mix all other ingredients together in a bowl(not noodles) & form 1 1/2 in balls dropping them into the hot soup mixture until all are in & gently rolling.Turn down heat & simmer for 25 -30 mins until rice is cooked. Cook noodles ,drain,put in bowl & add 3 T butter & toss to coat.
