Ingredients For pressure cooked pork ragu

  • 2 lb
    country style pork ribs, trimmed from fat and cut into chunks
  • salt and pepper
  • 1 Tbsp
    vegetable oil
  • 1 md
    onion, chopped small
  • 8 clove
    garlic, minced
  • 2 Tbsp
    tomato paste
  • 1/2 c
    dry red wine
  • 1 can
    crushed tomatoes (28 oz)
  • 1 c
    chicken stock
  • 1 tsp
    dried oregano
  • 1/8 tsp
    red pepper flakes
  • 2 Tbsp
    brown sugar
  • 1 lb
    pasta of choice
  • fresh basil or parsley, for garnish

How To Make pressure cooked pork ragu

    Place the oil in the Instant Pot. Select saute. Season the pork with salt and pepper. Brown the pork on all sides. Add the onion and cook until onion is browned. Add the garlic and tomato paste. Cook 30 seconds. Add the red wine and let most evaporate.

    Add the remaining ingredients except the pasta and herbs for garnish. Select pressure cook. Secure the lid and pressure cook on high for 20 minutes. Let release naturally for 15 minutes then quick release.

    Stir and break up meat. Skim off excess oil. If the sauce is a bit thin, add more tomato sauce to thicken. Serve over pasta of choice and garnish with herbs.

    This is also good with some Parmesan cheese.
