pork white bean chili
The Pork Chili is based on a White Chicken Chili recipe I have used for years the fresh peppers and herbs are from my garden this is a very filling and great tasting dish. We could not stop eating it. In the recipe I used fresh pork ribs but I thought the tenderloin will work just as well.

Ingredients For pork white bean chili

1 &1/2 lbpork tenderloin boiled and cut in cubes

2 Tbspoilve oil

1 mdonion chopped

1/4 cfresh basil chopped fine

1/4 cfresh cilantro chopped fine

1 candiced tomatoes plain do not drain

1 cpork broth saved from boiling tenderloin

1 lgjalapenos, fresh chopped

1 mdpoblano pepper chopped

1 tspgarlic powder
-
1 tspground cumin
-
1/2 tsporegano leaves
-
1/2 to 1/4 tspcayenne pepper

1 canwhite beans (cannellini) do not drain

salt to taste

1 bagfinely shreaded cheese colby jack or chedder
How To Make pork white bean chili

1Heat olive oil in 3 quart saucepan add chopped onion cook over medium high heat and cook 2 minutes do not brown. Stir in broth from boiling pork tenderloin you can use more if you want to add can of undrained tomatoes add chilies fresh basil and cilantro.

2Add dry spices, garlic,cumin,Oregano . Simmer for 30 minutes. Stir in cooked pork and and cannellini beans simmer for 10 minutes

3If you wish to top off chili with cheese use Finley shredded Colby jack or chedder. This is optional I did not use cheese on mine
