ground Himalayan pink salt, to taste

1 tspsmoked paprika or as needed

1 Tbspbutter

1 Tbspolive oil

1 cfinely chopped white onions

1/2 cfinely chopped red pepper

4 lgcloves garlic, pressed

3 cbaby spinach, packed

1 1/4 cheavy cream
-
1/2 clow-sodium chicken broth
-
1/4 cdry white wine
-
1/2 TbspHerbes de Provence
-
1/4 tspred pepper flakes, or to taste

1/3 cGrana Padano cheese (substitute Parmigiano-Reggiano or asiago cheese), grated
How To Make pork loin chops in creamy spinach sauce

1Generously season chops on one side with salt, pepper, and smoked paprika; set aside.

2In a deep skillet over medium-high heat, add butter and oil.

3When it sizzles, add pork, seasoned side down, and season the top with salt, pepper, and paprika.

4Sear for 3 minutes per side or until the internal temperature reaches 145º F. Transfer to a plate and set aside.

5Reduce heat to medium. Add onions and sauté for 1 minute. Add red peppers and cook for 2 minutes. Add garlic and sauté for 45 to 60 seconds.

6Add spinach and toss it around for 2 minutes.

7Pour in heavy cream, chicken broth, and white wine. Add Herbes de Provence, red pepper flakes, and cheese. Stir to combine and bring the mixture to a simmer.

8Reduce heat to medium-low and cook for 3 minutes.

9Return the pork chops to the skillet including any accumulated juices and coat with the sauce; reheat for 2 minutes.
