1 pkgeckrich sausage, diced

1red onion, chopped

1white onion, chopped

1green bell pepper, chopped

1red bell pepper, chopped

1medium pork loin

5-6red potaotes, cubed with skins on

2carrots, diced

1/2head of cabbage, chopped

2strips of bacon
-
1 canrotel tomatoes

1 canwater

1 tspsalt
-
1 tspblack pepper

1 tspcajun seasoning
How To Make pork loin and sausage stew

1Preheat oven to 350. You may need to lower the shelf because this needs a fairly large pan. I use a foil roaster pan. You can also use a large metal roaster pan.

2Chop sausage, onions, green peppers, potatoes, carrots, and carrots. Put pork loin in bottom of pan, add chopped vegetables and sausage. Pour 1 can of rotel tomatoes and add 1 can of water on top. Season with salt and pepper. Lay strips of bacon across the top. Cover tightly with foil and bake for 2 1/2 - 3 hours.
