Ingredients For pork & green bean stir fry with cashews

1/4 clow-sodium soy sauce

2 tspcornstarch

1 lbpork tenderloin, cut into 1/4 inch thick slices

4 ccut green beans (2 inch pieces)

2 tspdark sesame oil
-
cooking spray
-
1-2 Tbspfresh ginger, minced
-
2 clovegarlic, minced
-
1/4 csliced green scallions (more to garnish)

1/4 clow-sodium chicken broth
-
2 ccooked rice
-
1/4 cchopped cashews, unsalted and toasted
How To Make pork & green bean stir fry with cashews

1Mix the soy sauce and cornstarch to make a slurry. Add pork, stirring to coat. Cover and chill.

2Place beans in a saucepan of boiling water and par boil for approx. 5 minutes. Drain and plunge into ice water - then drain.

3Heat sesame oil in a large nonstick skillet (coated with cooking spray) over medium-high heat. Add the ginger, scallions and garlic and stir-fry for approx. 1 minute. Add pork mixture and stir fry 1 1/2 minutes. Add green beans and stir-fry another 1 1/2 minutes. or until pork is done.

4Stir in broth and reduce heat - simmer 2 minutes. Serve over cooked rice and add chopped cashews on top. Garnish with sliced scallions.
