How To Make pork essentials: thrice-cooked yummy pork loin

  • 1
    PREP/PREPARE
  • 2
Gather your Ingredients (mise en place).
  • 3
Add all the rub ingredients together into a small bowl.
  • 4
Remove the skin from the onion, cut pole-to-pole, slice into 1/4 inch (.6cm) half rounds, and reserve.
  • 5
Take half the rub and rub it into the pork loin.
  • 6
Place a rack in the middle position, and preheat the oven to 375f (190c).
  • 7
Add about a tablespoon of grapeseed oil to an ovenproof skillet, over medium-high heat, and add the pork.
  • 8
Sear on the sides and edges, about 1 - 2 minutes per side.
  • 9
Chef’s Note: Keep an eye on the pork, and don’t allow the sugars in the rub to burn. We want a nice browning sear; not a blackened burn.
  • 10
Place the pork loins on a parchment-lined baking sheet, fitted with a rack. Place into the oven, and allow to bake for about 25 minutes.
  • 11
Chef’s Note: If you don’t have a rack, then turn the pork loins over, halfway through the baking process.
  • 12
Wipe out the pan, add a bit more grapeseed oil, and reduce the heat to medium.
  • 13
Add the sliced onions, and cook, while the pork is baking.
  • 14
Chef’s Tip: You can add a pinch of salt to get the process started.
  • 15
Remove the pork loins from the oven, and allow them to rest for 10 minutes.
  • 16
While the pork is resting, add a tablespoon or two of water to the onions, and stir.
  • 17
Cut the pork into thick slices, and sprinkle half the remaining rub on one side of the pork.
  • 18
Push the onions to the side of the pan, and then add the sliced pork, rub side down. Sprinkle the remaining rub over the top of the pork slices.
  • 19
Allow the pork to cook, for about 2 minutes, and then flip and cook an additional 2 minutes.
  • 20
    PLATE/PRESENT
  • 21
Serve on a nice plate, top with some of the onions, drizzle on some balsamic glaze and serve with your favorite side (potatoes, rice, stewed apples). Enjoy.
  • 22
Keep the faith, and keep cooking.
