pork essentials: sweetly glazed pork loin

- THE PORK GLAZE

1/2 capricot preserves

1/2 cpeach preserves

2 Tbspfresh clover honey

2 Tbsplemon juice, freshly squeezed
- THE PORK LOIN

3 - 4 lbboneless pork loin

2 Tbspolive oil, extra virgin

1 Tbspsalt, kosher variety

1 Tbspwhite pepper, freshly ground
How To Make pork essentials: sweetly glazed pork loin

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3THE PORK GLAZE

4Add all the ingredients to a small saucepan over medium-low heat.

5Whisk together and bring up to a light simmer.

6Allow to lightly simmer for 5 minutes, then remove from the heat, and reserve.

7THE PORK LOIN
-
8Remove the pork loin from the fridge, and allow to rest on the countertop for 20 – 30 minutes.

9Place a rack in the middle position, and preheat the oven to 425f (220c).

10Mix the salt & pepper together in a small bowl.

11Rub the olive oil over the pork loin, and then sprinkle with the salt & pepper.

12Line a rimmed baking sheet with parchment paper, and add a rack.

13If you have one, insert an instant-read thermometer into the center of the roast, and place on the rack.

14Roast the pork loin for 15 minutes.

15Remove from the oven, reduce the heat to 300f (150c), and brush on some of the glaze.

16Return to the oven, and roast until the internal temp reaches 135f (60c), about 35 to 40 minutes.

17Chef’s Note: Baste with additional glaze two more times, at 15 minute intervals.

18Remove from the oven cover with foil, and allow to rest for 15 minutes, before slicing.

19Chef’s Note: Carryover cooking will increase the internal temperature of the pork loin to 140f (60c). If you want yours cooked to a higher temperature, just remember to take it out of the oven when it is about 5 degrees of your target temperature.
