2 Tbspsweet butter, unsalted

1 Tbspgrapeseed oil

salt, kosher variety, to taste

black pepper, freshly ground, to taste

2 mdpork tenderloins, about 8 ounces

1/4 cshallots, finely chopped
-
1/4 corange marmalade
-
1 Tbspponzu sauce
-
1 clovebaked garlic, smashed

2Ponzu sauce is a light version of tamari sauce with lemony notes.

3Gather your Ingredients (mise en place).

4Place the oil and butter in a sauté pan over medium heat.

5Salt and pepper both sides of the pork tenderloins.

6Add the tenderloins to the pan. Cook until browned, about 4 – 5 minutes per side.

7Remove from the pan, and reserve.

8Add the shallots to the pan, and cook until softened, about 3 – 4 minutes.

9Add the ponzu sauce, orange marmalade, and garlic, and then stir to mix.

10Add the pork tenderloins, and cook over low heat, until the sauce begins to thicken, about 3 – 5 minutes.
