Love me some sweet potatoes! Then lets make it twice baked, and I go directly into my happy place. Add pork chops, need I say more? Another one from Barb & Dad.

Ingredients For pork chops with twice baked sweet potatoes

2 lgsweet potatoes

1 Tbspmaple syrup

1/4 tspcinnamon

1/4 tspsalt

1/4 tsppepper

2 Tbspfinely chopped pecans, divided

4boneless pork chops

1 Tbspolive oil

1/4 tspsalt

1/4 tsppepper

1/2 tspdried rosemary
How To Make pork chops with twice baked sweet potatoes

1Oven to 375 degrees. Prick potatoes with fork, place on sheet of foil in oven. Bake until tender, about 45 min. Let cool, cut slice lengthwise along each potato, scoop out insides and place in mixing bowl.

2Stir in maple syrup, cinnamon, salt and pepper. Return mixture to potato shells, top each with 1/2 T pecans. Mist a baking pan with PAM. Bake potatoes in pan, uncovered, for 25 min.

3Sprinkle pork chops with salt, pepper and rosemary. Warm oil in skillet oven med heat. Saute chops until cooked through, about 4-5 min per side. Serve with potatoes on the side.
