Ingredients For pork chops with pineapple bbq sauce

4 lgbone-in pork chops, patted dry

ground himalayan pink salt, to taste

freshly ground black pepper, or to taste (i always use mixed peppercorns)

2 Tbspcanola oil

1/2 cwhite onions, diced
-
1/2 cred peppers, diced
-
2 Tbspjalapeño peppers, seeded and finely diced
-
1 1/2 cpineapple, cored and diced
-
2 Tbspginger, minced
-
2 lgcloves garlic, pressed
-
3/4 cpineapple juice
-
1/4 cKansas City bbq sauce
-
1 Tbspbrown sugar
-
1 tspground cumin
-
1 Tbspcorn starch (mixed in 1/2 cup cold water)
How To Make pork chops with pineapple bbq sauce

1Generously season pork chops on both sides with salt and pepper; set aside.

2In a large skillet over medium heat, add oil and when hot, place chops. Cook them until brown, about 2:30 to 3 minutes per side depending on the thickness.

3Transfer them to a plate while continuing with the recipe.

4In the same skillet, add onions and quickly sauté for 1 minute. Add red and jalapeños peppers, and cook for 1 minute.

5Add pineapple and sauté for 2 minutes before adding ginger and garlic; sauté 1 minute.

6Pour in pineapple juice and Kansas BBQ sauce. Stir well, bring the mixture to a gentle simmer; add brown sugar and ground cumin.

7Return pork chops including any accumulated juices back to the skillet, spoon sauce over the meat, cover, and simmer for 5 minutes.

8Flip the chops and spoon sauce over; cover and cook for an additional 5 minutes.

9When time is up, transfer the meat onto a plate and add cornstarch mixture. Stir well until the sauce thickens, about 30 to 40 seconds. Serve immediately.
