Found this recipe on the internet when we were lucky enough to get some great Georgia peaches and I was trying to figure out something to do with them. Turned out fantastic! I would double the sauce though...can not get enough of this sauce. Recipe from: http://www.myrecipe.com

Ingredients For pork chops with bourbon-peach sauce

44oz boneless center-cut loin pork chops (about 1/4 inch thick)

3/4 tspsalt

1/4 tsppepper

1/4 tspground red pepper

2-3 Tbspolive oil or cooking spray

1 Tbspminced shallots
-
1 cloveminced garlic
-
1 1/2 cfrozen peaches (use as many peaches as you want. the more the better in our experience)

1/2 cchicken broth
-
2 tspbrown sugar

2thyme sprigs
-
2 Tbspbourbon
-
2 tspbutter
How To Make pork chops with bourbon-peach sauce

11. Sprinkle pork with salt and peppers. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add pork to pan; cook 2 1/2 minutes on each side or until browned. Remove pork from pan; keep warm.

22. Add shallots and garlic to pan; sauté 30 seconds. Add peaches and broth to pan; sauté 2 minutes. Add sugar and thyme to pan; cook 1 minute. Add bourbon and butter to pan; cook 4 1/2 minutes or until butter melts and sauce is slightly thickened. Discard thyme sprigs. Serve with pork.
