This is a delicious ham loaf that my family has love for about 100 years! Sometimes my mother would double or triple the recipe if company was coming or if she wanted to have leftovers. (We had a big family).

Ingredients For pineapple ham loaf

2 cancrushed pineapple including juice (set 1/2 can aside)

4 cbread crumbs

6 lgeggs (beaten well)

1each; red and green bell peppers (minced) set 1/2 cup aside

1 lgonion (minced very fine)

4 lbsmoked ham (ground)

2 1/2 lbpork (ground)

3 Tbspsoy sauce
-
1 tspdry mustard
-
1 tspground black pepper
-
1/4 tspground red pepper
-
1/3 tspsalt (optional)
- TOPPING
-
1/2 cancrushed pineapple (including juice)

1/2 cmiced red and green bell pepper
-
1/2 tspdry mustard

5 Tbsphoney
-
1 Tbspprepared yellow mustard
How To Make pineapple ham loaf

1Preheat oven to 350 degrees.

2Set 1/2 can of crushed pineapple aside. Put the rest in a bowl (including juice). Stir in the bread crumbs, Leave sit.

3Beat the eggs and soy sauce and spices together well in large bowl. Add the green pepper, meats and mix together very well. Add the pineapple and bread mixture. Combine together well.

4Put into a roast pan, form into a loaf. Bake at 350 degrees for 2 hours.

5While the loaf is baking: Make the topping for the loaf by mixing all ingredients together and set aside until the last 35 minutes of cooking. Spread it over the loaf and return to oven for remaining time.

6Remove from oven and let sit for 10 minutes before slicing to serve.

7*** I serve this with mashed potatoes or rice, and with a vegetable mixture
