Ingredients For peppercorn crusted pork loin

4 lbpork loin

1/2 tspkosher salt

1/4 cdijon mustard
-
2 Tbspbuttermilk
-
2 cfresh whole wheat breadcrumbs

2 Tbspcracked black peppercorn
-
2 tspassorted peppercorn, crushed

2 tspfresh thyme, chopped
How To Make peppercorn crusted pork loin

1Preheat oven to 325.

2Sprinkle roast with salt. Combine mustard & buttermilk, spread over all sides of roast.
Combine fresh breadcrumbs in a bowl with remaining ingredients. Press evenly over entire roast. This will be messy, I do this on a large piece of wax paper. -
3Place roast on a lightly greased rack over roasting pan. Bake at 325 for till reach 145 degrees about 75 minutes.. Let stand for at least 10 minutes, do not tent with aluminum will make crust moist.
