You can't eat just one! These sandwiches are a favorite at our casual family gatherings and they look pretty. Huey attended an event where this type of sandwich was served and came home raving about them. So, this is my version. He loves them, and apparently, so does everyone else. For the bread, make the sandwich with all white bread, all whole wheat bread, or mix and match the two.

These party ham and egg salad sandwiches are simple crustless sandwiches with a fancy feel. The salty ham salad is a wonderful complement to the milder egg salad. Serve them at brunch, a tea party, a baby or bridal shower, or a holiday party.

Ingredients For party ham and egg salad sandwiches

  • HAM SALAD
  • 3 can
    smoked ham (5 oz each)
  • 1/2 c
    mayonnaise
  • 1/8 c
    celery, finely processed
  • 2 Tbsp
    pickle relish
  • 1/4 tsp
    black pepper
  • EGG SALAD
  • 8
    hard-boiled eggs, peeled and mashed
  • 1/2 c
    mayonnaise
  • 1/4 tsp
    black pepper
  • BREAD
  • 1
    loaf, sliced white bread
  • 1
    loaf, sliced whole wheat bread

How To Make party ham and egg salad sandwiches

We put the ham and hard-boiled eggs through a food process to easily chop them.
  • Mash canned ham.

    HAM SALAD: Drain liquid from canned ham and place into a bowl. Separate, and smash with a fork.
  • Add celery, seasoning, and mayonnaise.

    Add the pickle relish, celery, and black pepper. Increase or decrease mayonnaise to achieve a smooth spreading consistency while remaining stiff enough to not "run." Refrigerate several hours or overnight to allow the flavors to blend.
  • Finely chop hard-boiled eggs.

    EGG SALAD: Using a hand grater, grate the hard-boiled eggs into a bowl.
  • Add black pepper and mayonnaise.

    Add the black pepper. Increase or decrease the mayonnaise as necessary to achieve a smooth spreading consistency. Place in the refrigerator.
  • Cut the crust off the bread.

    ASSEMBLE SANDWICHES: Remove the crusts from the bread.
  • Place ham salad on one piece of bread.

    Spread a thin layer of ham salad on one slice of bread.
  • Top with another piece of bread.

  • Spread egg salad on the slice of bread.
