You can't eat just one! These sandwiches are a favorite at our casual family gatherings and they look pretty. Huey attended an event where this type of sandwich was served and came home raving about them. So, this is my version. He loves them, and apparently, so does everyone else. For the bread, make the sandwich with all white bread, all whole wheat bread, or mix and match the two.

1/8 ccelery, finely processed

2 Tbsppickle relish

8hard-boiled eggs, peeled and mashed

1loaf, sliced white bread

How To Make party ham and egg salad sandwiches
Test Kitchen Tips
We put the ham and hard-boiled eggs through a food process to easily chop them.

1HAM SALAD: Drain liquid from canned ham and place into a bowl. Separate, and smash with a fork.

2Add the pickle relish, celery, and black pepper. Increase or decrease mayonnaise to achieve a smooth spreading consistency while remaining stiff enough to not "run." Refrigerate several hours or overnight to allow the flavors to blend.

3EGG SALAD: Using a hand grater, grate the hard-boiled eggs into a bowl.

4Add the black pepper. Increase or decrease the mayonnaise as necessary to achieve a smooth spreading consistency. Place in the refrigerator.

5ASSEMBLE SANDWICHES: Remove the crusts from the bread.

6Spread a thin layer of ham salad on one slice of bread.

7Top with a piece of bread.

8Spread a thin layer of egg salad on the top piece of bread.

9Place a piece of bread onto the egg salad.

10Diagonally slice the sandwich.
