n.e. style ham & bean chili w/ maple bacon

This is a variance of my dad's old, old, recipe that I found in my mom's old recipe box. I remember him making this on cold Saturday's, ( which were usually frank & beans day,) and honestly, this really warms you up!

Ingredients For n.e. style ham & bean chili w/ maple bacon

  • 1 lb
    maple bacon, diced & cooked
  • 1
    28 oz can vegetarian beans, undrained
  • 1
    28 oz can bush's maple cured bacon beans
  • 1/4 tsp
    cumin
  • 1-1/2 tsp
    ground mustard
  • 1 Tbsp
    onion powder
  • 1 Tbsp
    garlic powder
  • 1/2 tsp
    chili powder
  • 2 c
    water
  • 2
    10 oz cans rotel diced tomatoes w/ chili's
  • 1
    10-12 oz can tomato paste
  • 2 lb
    sweet italian sausage-ground
  • 1 lb
    hickory smoked, boneless ham steak, cubed
  • 1-1/2 oz
    pure maple syrup

How To Make n.e. style ham & bean chili w/ maple bacon

    Spray a large pot w/ cooking spray. Heat pot over medium heat and add bacon. Cook until a little crisp. Remove bacon onto paper towels. Drain bacon grease from pot.

    Add ham to the pot and cook, stirring, for 3 mins. Remove ham from pot. Add the sausage and cook just until browned. Drain fat from pot. Add water, tomato paste & diced tomatoes. Add garlic & onion powders along w/ chili powder.

    Stir in ground mustard and cumin. Stir in the both cans of beans. Stir in bacon, sausage and ham. Bring to a boil. Reduce heat, ( once boiling,) to a simmer. Stir in pure maple syrup. Cover and cook, stirring occasionally, for 1-1/2-2 hrs.
