Ingredients For my sausage and peppers

2 lbhot or sweet italian sausage, or a combination of both (i used the combination this time)

8 oztomato sauce

2 lgsweet onions, sliced

3green bell peppers, sliced

2red peppers, sliced

olive oil, as needed
How To Make my sausage and peppers

1Pre heat oven to 350 degrees. Spray a 9x13 casserole dish with cooking spray. Cover bottom of casserole with tomato sauce.

2Slice onions and peppers, and saute in a large frying pan in 1-2 tablespoons olive oil until vegetables are soft and tender. Set aside.

3In same pan, par-boil sausage for 10 minutes. Drain water from pan, slice sausage, and brown in 1 tablespoon olive oil.

4When sausage is browned, combine with vegetables in the frying pan. Mix well, then transfer to casserole. Cover with aluminum foil, and bake in oven for 30 minutes, or until heated through.

5Serve with italian bread, and a green salad for a delicious meal. Enjoy!
