My mom made this casserole for me when I was growing up and it's been one of my breakfast favorites! She also took it to church breakfasts and it was always a hit!! The leftovers are also great warmed up in a tortilla for breakfast the next morning!

Ingredients For mom's breakfast casserole

  • 6
    eggs
  • 2 c
    milk
  • 1/4 c
    onion, chopped
  • 2 c
    garlic and cheese croutons
  • 1 Tbsp
    mustard
  • 1/2 lb
    bulk italian breakfast sausage
  • 6 oz
    shredded cheese, colby jack
  • 1/4 tsp
    garlic pepper
  • 1/4 tsp
    italian seasoning
  • salsa for topping

How To Make mom's breakfast casserole

    Mix all ingredients together and let set 6 hours to overnight in fridge. Put in 9x13 pan sprayed with cooking spray and bake at 350* for 30-40 minutes. Serve with your favorite salsa
