I don't care for chili beans, so I adapted my own recipe! I always get rave reviews and requests for the recipe. It's a crowd-pleaser. My husband doesn't want me to post this recipe, but it's too good not to share. I like to do the prep ahead of time when I can.

With lots of heat and tons of flavor, this chili is especially tasty and hearty. Add a big dollop of sour cream to cap it off and cool it down. Serve with tortilla chips or a big chunk of cornbread.

In a large pot or Crock Pot, add meat/veggie mixture. Add all remaining ingredients. Stir. Let simmer on low for 3 hours. Enjoy! Optional toppings: shredded sharp cheddar cheese, diced onion, sour cream, bacon, and cilantro. I have served this in a bread bowl and let guests choose their toppings. Makes a nice presentation too!
