This recipe comes from one of the many cookbooks I got from my mom when she gave me her Redi-Set-Go machine. I love those things and it makes it real easy for me to cook my food and lose weight.

Ingredients For mini pork and potato loaves

  • 1 md
    russet potato, peeled and cooked
  • 2 Tbsp
    butter
  • 1 md
    onion, chopped
  • 1 clove
    garlic, chopped
  • 1 c
    ground pork
  • 1 tsp
    salt, divided
  • 1/2 tsp
    pepper, divided
  • 1
    egg
  • 4 oz
    mushroom, sliced
  • 1/4 c
    white wine, or chicken broth
  • 1/4 c
    sour cream

How To Make mini pork and potato loaves

    Mash cooked potato and set aside.

    Heat butter in skillet and saute onion and mushroom with salt and pepper until tender, about 5 minutes.

    In a bowl place about 1/4 of onions mushroom mixture and using paring knife and fork chop into small pieces.

    Add pork and potato and mix well.

    Form into 2 balls.

    Preheat Xpress with divider pan and spray with nonstick cooking spray.

    Place pork mixture in wells using fork to distriblute mixture evenly. Close cover.

    Cook 12 minutes.

    Heat pan with remaining mushrooms, add wine and sour cream, stirring to make sauce.

    Serve sauce over pork.
