I had a small pork roast and wanted to do something different with it. So, I started adding a few things to my crockpot and came up with this.You can use this as a filling for burritos,tacos, chimichangas, or even put it on a hamburger bun. Ingredients For mexican style crock-pot pork

  • 1 1/2 lb
    boneless pork roast
  • 1/2 c
    each of red and green pepper, diced
  • 1/3 c
    finely chopped celery
  • 1/2 c
    finely chopped sweet onion
  • 1 tsp
    ground cumin
  • 1/2 tsp
    each of seasoning salt and garlic powder,( feel free to add more garlic powder)

How To Make mexican style crock-pot pork

  • 1
    Place the roast in a 2 quart crockpot
  • 2
    Add rest ingredients over meat
  • 3
    Cook for 6 hours on low, remove meat and shred.
  • 4
    Return meat to pot and stir to mix in the juices and cook for one more hour.
