This recipe is so easy and I'm telling ya, EVERYBODY loves it ! I am constantly asked for the recipe, so I had to post it. This recipe is done in a pressure cooker, but it can be done stove top in a pot, cooking low and slow for 3 hours. (or put it in a crock pot for that matter !) Great to eat as a roast or to pull the pork and make tacos, tamales, enchiladas or stuffed in arepas (my fave). I like to serve it with my cheesy chorizo potatoes *recipe posted, beans and Spanish rice. Yummy in your tummy ! PS: This dish has no heat as green chili enchilada sauce is very mild

Ingredients For mexican pulled pork with a green chili sauce (pc)

  • 3-4 lb
    pork roast
  • 1 lg
    jar salsa verde (or 2 regular ones)
  • 2 can
    green enchilada sauce
  • 1 tsp
    cumin ( i use twice this amount as we love cumin but others may not be as fond of as we are)
  • salt and pepper

How To Make mexican pulled pork with a green chili sauce (pc)

    Lightly oil meat then rub salt, pepper and cumin all over meat.

    Turn on heat and heat up PC then brown meat on all sides.

    Add salsa verde, green chili enchilada sauce and 2-3 tsp cumin. Stir it up making sure to scrape the bottom of pan. Lock lid on bring to temp. Adjust heat so that you have a steady rock. Cook 40 minutes.

    Turn off heat and let cool. Done ! We usually have it as a roast the first serving and use leftovers to make pulled pork tacos, tamales, enchiladas or stuff into arepas. It's just two of us. ;)
