This recipe is low cal, double duty, with enormous flavor! It's a Crock Pot recipe too so it tastes like you've been slaving all day. :) I also use this pork in my Cuban sandwiches.

Juicy and moist, this pork tenderloin is a flavorful dinner. The peppers add a bit of heat and smokiness which pairs well with the beautiful citrus flavors. It's so easy to make too. We served it over rice and spooned the delicious juices on top. So good!

Ingredients For mexican citrus roasted pork

  • 2
    pork tenderloins
  • 2 c
    fresh orange juice
  • 1
    lime, juice
  • 1 1/2
    water
  • 2
    chipotle peppers, seeded and chopped
  • 1
    large jalapeno (or 2 small ones)
  • 1/2
    small white onion
  • 1 pkg
    fajita seasoning, divided use
  • 3
    bay leaves, dried

How To Make mexican citrus roasted pork

  • Searing pork tenderloins in a pan.

    Take your tenderloins out of the package and dry them with paper towels. Salt & pepper on each side. Sear in a pan on high until they are golden brown on all sides.
  • Orange juice, lime, and water in a Crock Pot.

    Combine your orange juice, lime juice, water into your Crock Pot.
  • Adding fajita seasoning and veggies to the Crock Pot.

    Add 2 tbsp of fajita seasoning to the juice/water mixture. Throw in your chopped veggies: jalapenos, chipotle peppers, and onions. Add the bay leaves.
  • Placing the seared tenderloins in the Crock Pot.

    Put your tenderloins into the Crock Pot, cook on high for 4 hours until it's tender and falls apart.
